- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- 1/2 teaspoon almond extract (optional, enhances cherry flavor)
Instructions:
Step 1: Prepare the Cherry Topping
- In a saucepan over medium heat, combine cherries, granulated sugar, cornstarch, and water.
- Stir constantly until the mixture thickens and becomes glossy, about 5–7 minutes.
- Remove from heat and stir in almond extract if using.
- Let cool completely.
Step 2: Make the Cream Cheese Filling
- In a large bowl, beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract. Beat until creamy and fully combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
Step 3: Assemble the Pie
- Spread the cream cheese filling evenly into the chocolate pie crust.
- Spoon the cooled cherry topping over the filling.
- Smooth the top gently with a spatula.
Step 4: Chill
- Refrigerate for at least 3–4 hours, or until fully set.
