Chocolate Cherry Pie Recipe

Ingredients:

  • 1 9-inch chocolate pie crust (store-bought or homemade)
  • 8 oz cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 2 cups tart cherries (fresh, frozen, or canned, well drained)
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 teaspoon almond extract (optional, enhances cherry flavor)

Instructions:

Step 1: Prepare the Cherry Topping

  1. In a saucepan over medium heat, combine cherries, granulated sugar, cornstarch, and water.
  2. Stir constantly until the mixture thickens and becomes glossy, about 5–7 minutes.
  3. Remove from heat and stir in almond extract if using.
  4. Let cool completely.

Step 2: Make the Cream Cheese Filling

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract. Beat until creamy and fully combined.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

Step 3: Assemble the Pie

  1. Spread the cream cheese filling evenly into the chocolate pie crust.
  2. Spoon the cooled cherry topping over the filling.
  3. Smooth the top gently with a spatula.

Step 4: Chill

  • Refrigerate for at least 3–4 hours, or until fully set.

Serving Tips

  • Slice with a sharp knife wiped clean between cuts.
  • Garnish with chocolate shavings or whipped cream if desired.
  • Best served cold.

Storage

  • Store covered in the refrigerator for up to 4 days.
  • Do not freeze, as the cream cheese filling may change texture.
