Chicken Caesar Salad Croissants

Ingredients:

  • 3 large butter croissants
  • 1 lb chicken breast tenders
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt and pepper, to taste
  • 4 cups chopped romaine lettuce
  • 2 cups grated Parmesan cheese
  • Caesar Dressing
  • 2 cups mayonnaise
  • 1/2 cup lemon juice
  • 1/2 cup finely grated Parmesan cheese
  • 2 tbsp anchovy paste
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • 1 tbsp minced garlic
  • 1 tsp black pepper
  • Salt, to taste

Instructions:

  1. Season chicken tenders with garlic powder, onion powder, salt, and pepper.
  2. Cook chicken in a skillet over medium heat (or grill) until fully cooked and golden. Let cool slightly, then chop or slice.
  3. In a bowl, whisk together all dressing ingredients until smooth and creamy.
  4. In a large bowl, toss romaine lettuce with cooked chicken, Parmesan cheese, and enough dressing to coat evenly.
  5. Slice croissants in half and lightly toast if desired.
  6. Fill each croissant generously with the chicken Caesar salad mixture.
  7. Serve immediately.
