Cool Ranch Taco Crock-Pot Casserole

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 (10 oz) can Rotel tomatoes, undrained
  • 1 cup shredded cheese
  • 1/2 cup Catalina dressing
  • 1 bag Cool Ranch Doritos, crushed
  • Lettuce and diced tomatoes, optional for topping

Instructions:

1. Cook the Beef
Brown the ground beef in a skillet over medium heat. Drain any excess grease, then stir in the taco seasoning and the can of Rotel tomatoes. Mix well and let simmer for 2–3 minutes.

2. Layer the Casserole
Lightly grease the crock-pot. Add a layer of crushed Doritos on the bottom, followed by a layer of the beef mixture, a sprinkle of shredded cheese, and a drizzle of Catalina dressing.

3. Repeat Layers
Repeat the layers once more: Doritos, beef mixture, cheese, and Catalina dressing.

4. Cook
Cover and cook on LOW for 3–4 hours or HIGH for about 2 hours, until the casserole is hot and the cheese is melted.

5. Serve
Top with shredded lettuce and diced tomatoes if desired before serving.

Serving Tips

  • Serve with sour cream, avocado slices, or jalapeños for extra flavor.
  • If you like extra crunch, add a handful of fresh crushed Doritos on top right before serving.
  • This dish also works well with tortilla chips if Cool Ranch Doritos are unavailable.
