Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 cup sour cream
- 2 cups shredded cheddar or Mexican-blend cheese
- 1 bag Fritos or Doritos, crushed
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Stir in taco seasoning and salsa. Simmer for 2–3 minutes.
- Add black beans and corn; stir until well combined. Remove from heat.
- Spread a layer of crushed chips in the bottom of the baking dish.
- Spoon half of the beef mixture over the chips.
- Spread half of the sour cream evenly over the meat, then sprinkle with cheese.
- Repeat layers with remaining chips, beef mixture, sour cream, and cheese.
- Bake uncovered for 25–30 minutes, or until hot and bubbly.
- Let rest 5 minutes before serving.
Serving Ideas
- Top with shredded lettuce, diced tomatoes, jalapeños, or green onions
- Serve with extra salsa or guacamole on the side
