Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup crushed pineapple, well drained
- ½ cup brown sugar
- ¼ cup unsweetened shredded coconut
- Maraschino cherries (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and granulated sugar until light and fluffy.
- Mix in egg and vanilla until smooth.
- In a separate bowl, whisk flour, baking powder, and salt. Add to wet ingredients and mix just until combined.
- Fold in crushed pineapple and shredded coconut.
- Roll dough into tablespoon-sized balls and coat in brown sugar.
- Place on baking sheets, flatten slightly, and add a cherry on top if using.
- Bake 12–15 minutes, until edges are lightly golden. Cool before serving.
