Pineapple Upside Sugar Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup crushed pineapple, well drained
  • ½ cup brown sugar
  • ¼ cup unsweetened shredded coconut
  • Maraschino cherries (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and granulated sugar until light and fluffy.
  3. Mix in egg and vanilla until smooth.
  4. In a separate bowl, whisk flour, baking powder, and salt. Add to wet ingredients and mix just until combined.
  5. Fold in crushed pineapple and shredded coconut.
  6. Roll dough into tablespoon-sized balls and coat in brown sugar.
  7. Place on baking sheets, flatten slightly, and add a cherry on top if using.
  8. Bake 12–15 minutes, until edges are lightly golden. Cool before serving.
