Cottage Cheese Peanut Butter Oat Cookies

Ingredients:

  • 1 cup cottage cheese
  • 1 1/4 cups oats
  • 1/3 cup peanut butter
  • 1/4 cup honey or maple syrup

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. For a smoother texture, blend the cottage cheese until creamy. This step is optional.
  3. In a bowl, mix cottage cheese, peanut butter, and honey or maple syrup until well combined.
  4. Stir in oats until a thick dough forms.
  5. Scoop dough onto the baking sheet and gently flatten each cookie.
  6. Bake for 12–15 minutes, until set and lightly golden around the edges.
  7. Cool for a few minutes before serving.

Store cookies in an airtight container in the refrigerator for up to 5 days.
