Blueberry Sausage Pancake Casserole

 

Ingredients:

  • 4 cups pancake mix
  • 3 cups water (or as directed on pancake mix package)
  • 1 lb breakfast sausage, cooked and drained
  • 1 1/2 cups fresh blueberries
  • 1/3 cup maple syrup

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the breakfast sausage in a skillet until fully browned. Drain excess grease and set aside.
  3. In a large bowl, prepare the pancake batter according to package directions using the water.
  4. Stir in the cooked sausage, blueberries, and maple syrup. Reserve a small amount of sausage and blueberries for topping if desired.
  5. Pour the batter into the prepared baking dish and evenly spread it out.
  6. Sprinkle the reserved sausage and blueberries over the top.
  7. Bake for 40–45 minutes, or until the center is set and a toothpick inserted comes out clean.
  8. Serve warm with additional maple syrup if desired.
