Hamburger Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 5 cups beef broth
  • 1 (15-ounce) can diced tomatoes, with juice
  • 1 (8-ounce) can tomato sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 3 cups frozen mixed vegetables (corn, green beans, carrots)

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
  3. Stir in the diced onion and celery. Cook for 3–4 minutes until softened.
  4. Add garlic and cook for 30 seconds, until fragrant.
  5. Add potatoes, beef broth, diced tomatoes, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until potatoes are tender.
  7. Stir in frozen mixed vegetables and simmer an additional 5–10 minutes, until heated through.
  8. Taste and adjust seasoning as needed. Serve hot.

Tips & Variations

  • Add macaroni or small pasta for a heartier soup
  • Swap ground beef for ground turkey if preferred
  • This soup stores well and tastes even better the next day
