Cream Cheese Vanilla Breakfast Loaf

Ingredients:

  • 2 eggs
  • 3/4 cup sugar
  • 4 oz cream cheese, softened
  • 1/3 cup oil
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan.
  2. In a large bowl, whisk eggs and sugar until pale and slightly thickened.
  3. Beat in the softened cream cheese until smooth and fully incorporated.
  4. Add oil, milk, and vanilla extract. Mix until combined.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gently fold dry ingredients into the batter until just combined. Do not overmix.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–50 minutes, or until the center is set and a toothpick comes out clean.
  9. Cool completely before slicing for clean, neat pieces.

Serving Ideas

  • Serve plain, dusted lightly with powdered sugar, or with fresh fruit
  • Delicious toasted with a little butter
  • Makes a great make-ahead breakfast loaf for busy mornings
