Ingredients:
Meatloaf
- 1½ lb ground beef (or beef blend)
- 1 cup breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- ½ cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
Filling
- 1½–2 cups mozzarella cheese (block or sticks)
Bacon Wrap
- 10–12 slices bacon
Topping (Optional)
- ⅓ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.
- In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, milk, salt, pepper, paprika, Italian seasoning, ketchup, and Worcestershire sauce. Mix gently until just combined.
- Shape the meat mixture into a rectangle on the prepared baking sheet.
- Place the mozzarella cheese down the center of the meat.
- Fold the meat around the cheese, sealing the edges and shaping into a loaf.
- Wrap bacon slices around the meatloaf, slightly overlapping.
- In a small bowl, mix ketchup, brown sugar, and mustard. Brush evenly over the bacon.
- Bake uncovered for 50–60 minutes, or until the bacon is crispy and the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing.
Serving Tips
- Serve with mashed potatoes, roasted vegetables, or a simple green salad.
- Leftovers reheat well and make great sandwiches the next day.
