Roasted Beef Sirloin with Garlic Potatoes

 

Ingredients:

  • 2 lb beef sirloin
  • 1 lb baby potatoes
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp rosemary

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Mix garlic, olive oil, salt, pepper, thyme, and rosemary.
  3. Rub mixture all over the beef sirloin.
  4. Place beef in a roasting pan and arrange potatoes around it.
  5. Roast for about 1 hour, or until internal temperature reaches 135°F (57°C) for medium-rare.
  6. Rest beef for 10 minutes, then slice and serve with the roasted potatoes.
