Copycat Ritz Cheese Cracker Sandwiches

Ingredients:

  • Crackers
  • 1½ cups bread flour
  • 2½ teaspoons baking powder
  • 2 teaspoons sugar
  • 1 teaspoon kosher salt
  • 6 tablespoons cold unsalted butter, cubed
  • ½ cup cold water
  • 1 egg + 1 tablespoon water (egg wash)
  • Salt, for topping
  • Cheese Filling
  • 4 oz sharp cheddar cheese, cubed or shredded
  • 1 tablespoon milk
  • 2 teaspoons cornstarch

Instructions:

  1. In a food processor, pulse flour, baking powder, sugar, salt, and butter until crumbly. Add water and pulse just until dough forms.
  2. Shape dough into a flat rectangle, wrap, and chill 1 hour.
  3. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  4. Melt cheddar and milk over low heat. Stir in cornstarch until thickened. Chill.
  5. Roll dough to ⅛-inch thick. Cut into small rounds. Place on baking sheet.
  6. Prick crackers with a fork, brush with egg wash, and sprinkle with salt.
  7. Bake 15 minutes until golden and crisp. Cool completely.
  8. Blend chilled cheese filling until smooth. Pipe between two crackers to form sandwiches.
