Slow Cooker Shredded Beef

Ingredients:

  • 3 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
  2. Remove beef and sauté onion and garlic in the same skillet until softened.
  3. Place beef in the slow cooker and add onion, garlic, beef broth, Worcestershire sauce, paprika, cumin, salt, and pepper.
  4. Cover and cook on LOW for 8 hours, until the beef is tender.
  5. Shred with two forks and stir back into the juices before serving.
