Ingredients:
- 2 large apples, peeled, cored, and diced
- 1 cup cottage cheese
- ½ cup rolled oats
- ¼ cup honey or maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 2 large eggs
- ¼ cup milk (dairy or plant-based)
- ¼ cup chopped walnuts (optional)
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease four small oven-safe bowls or ramekins.
- In a large bowl, mix cottage cheese, oats, honey or maple syrup, cinnamon, vanilla, and salt.
- Add eggs and whisk until fully incorporated.
- Stir in diced apples and milk until evenly combined.
- Divide the mixture evenly among prepared bowls.
- Top with walnuts, if using.
- Place bowls on a baking sheet and bake for 25–30 minutes, until set and lightly golden.
- Let cool slightly and serve warm.
