Ingredients:
- 1/2 cup milk
- 1/4 cup water
- 2 Tbsp butter
- 2 cups all-purpose flour, divided (plus up to 1/2 cup more if needed)
- 2 Tbsp granulated sugar
- 1 tsp salt
- 1 large egg
- 1 package fast-rise dry yeast
- 12 chunks mozzarella cheese
- Olive oil
- Melted butter
- Garlic salt
- Grated Parmesan cheese
Instructions:
- Heat milk, water, and butter together to 115–125°F.
- In a large bowl, combine 1 cup flour, sugar, salt, egg, and yeast.
- Add the warm liquid and beat on medium speed for 2 minutes.
- Stir in the remaining 1 cup flour. Add up to 1/2 cup more flour if needed; dough should be sticky.
- Turn dough onto a floured surface and knead until smooth and elastic, about 10 minutes.
- Place dough in an oiled bowl, cover, and rest for 10 minutes.
- Divide dough into 12 equal balls.
- Flatten each ball into a 3–4 inch circle. Place a mozzarella chunk in the center and pinch to seal.
- Arrange rolls in a greased muffin pan or on a baking sheet, spacing at least 1 inch apart. Cover and let rise until doubled, 30–45 minutes.
- Preheat oven to 400°F. Brush rolls with melted butter mixed with olive oil.
- Sprinkle lightly with garlic salt and Parmesan cheese.
- Bake for 10–15 minutes, until golden brown.
