PB&J Streusel Muffins

Ingredients:

  • Streusel Topping
  • ¼ cup cold salted butter (½ stick)
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 2 tbsp oats (quick or old-fashioned)
  • Dash of salt
  • 1–2 tbsp cold water (as needed)
  • Muffins
  • 4 whole wheat English muffins, split
  • ¼ cup peanut butter
  • ¼ cup jelly or jam (any flavor)

Instructions:

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, cut together butter, flour, brown sugar, oats, and salt using a pastry cutter or fork until crumbly. Add a little water if the mixture feels too dry.
  3. Place the split English muffins on a baking sheet.
  4. Spread a thin layer of peanut butter on each half, followed by jelly or jam.
  5. Sprinkle the streusel topping evenly over all muffin halves.
  6. Bake at 325°F for 10 minutes.
  7. Increase oven temperature to 350°F (175°C) and bake for 2–3 more minutes, until the topping is lightly golden.
  8. Remove from oven and serve warm.
