Ingredients:
- Streusel Topping
- ¼ cup cold salted butter (½ stick)
- ½ cup all-purpose flour
- ½ cup brown sugar
- 2 tbsp oats (quick or old-fashioned)
- Dash of salt
- 1–2 tbsp cold water (as needed)
- Muffins
- 4 whole wheat English muffins, split
- ¼ cup peanut butter
- ¼ cup jelly or jam (any flavor)
Instructions:
- Preheat the oven to 325°F (165°C).
- In a bowl, cut together butter, flour, brown sugar, oats, and salt using a pastry cutter or fork until crumbly. Add a little water if the mixture feels too dry.
- Place the split English muffins on a baking sheet.
- Spread a thin layer of peanut butter on each half, followed by jelly or jam.
- Sprinkle the streusel topping evenly over all muffin halves.
- Bake at 325°F for 10 minutes.
- Increase oven temperature to 350°F (175°C) and bake for 2–3 more minutes, until the topping is lightly golden.
- Remove from oven and serve warm.
