Chili Cheese Potato Skillet

 

Ingredients:

  • 5 small to medium potatoes, peeled and cubed
  • Olive oil
  • Salt, black pepper, garlic powder, paprika (for potatoes)
  • 1 lb ground beef
  • 1 onion, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tsp chili powder
  • 1 tbsp minced garlic
  • 1 (10 oz) can diced tomatoes with green chiles, drained
  • 1 (15.5 oz) can chili beans, drained
  • 1½ cups shredded cheddar cheese
  • 2 green onions, chopped
  • Sour cream, for serving
  • Jalapeños, for serving

Instructions:

  1. Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  2. Air fry at 400°F for about 25 minutes, shaking the basket a few times, until crispy.
  3. Meanwhile, heat a large skillet over medium-high heat and brown the ground beef with the chopped onion.
  4. Season with salt, pepper, onion powder, paprika, and chili powder. Drain excess grease.
  5. Add minced garlic, diced tomatoes with green chiles, and chili beans. Stir well and simmer for a few minutes.
  6. Add the crispy potatoes to the skillet and mix to combine.
  7. Sprinkle cheddar cheese over the top and place the skillet in a 400°F oven for a few minutes, until the cheese is melted.
  8. Garnish with chopped green onions and serve with sour cream and jalapeños.
