Old Time Oven Peach Cobbler

Ingredients:

  • 4 cups peeled and sliced fresh peaches (or canned peaches, drained)
  • 1 cup granulated sugar, divided
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or similar size.
  2. Prepare the peaches:
    In a medium bowl, combine peaches, 1/2 cup of the sugar, cinnamon, and lemon juice. Stir well and set aside.
  3. Make the batter:
    In another bowl, whisk together flour, baking powder, salt, and remaining 1/2 cup sugar.
    Add melted butter, milk, and vanilla extract. Stir until just combined—do not overmix.
  4. Assemble the cobbler:
    Pour the batter evenly into the prepared baking dish.
    Spoon the peach mixture evenly over the batter. Do not stir.
  5. Bake:
    Bake for 40–45 minutes, or until the top is golden brown and the edges are bubbling.
  6. Cool slightly before serving to allow the cobbler to set.

Serving Tips

  • Serve warm with vanilla ice cream or whipped cream.
  • A drizzle of heavy cream over the top is old-school and delicious.

Optional Variations

  • Add 1/4 teaspoon nutmeg for deeper spice flavor.
  • Sprinkle coarse sugar on top before baking for extra crunch.
  • Substitute half the peaches with berries for a mixed-fruit cobbler.
