Ingredients:
- 4 cups peeled and sliced fresh peaches (or canned peaches, drained)
- 1 cup granulated sugar, divided
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or similar size.
- Prepare the peaches:
In a medium bowl, combine peaches, 1/2 cup of the sugar, cinnamon, and lemon juice. Stir well and set aside. - Make the batter:
In another bowl, whisk together flour, baking powder, salt, and remaining 1/2 cup sugar.
Add melted butter, milk, and vanilla extract. Stir until just combined—do not overmix. - Assemble the cobbler:
Pour the batter evenly into the prepared baking dish.
Spoon the peach mixture evenly over the batter. Do not stir. - Bake:
Bake for 40–45 minutes, or until the top is golden brown and the edges are bubbling. - Cool slightly before serving to allow the cobbler to set.
