Funnel Cake Bites

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 1/2 teaspoon vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Directions:

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the egg, milk, and vanilla extract. Whisk until smooth and lump-free.
  3. Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 350°F (175°C).
  4. Transfer the batter to a piping bag or a zip-top bag with the corner snipped off.
  5. Pipe small rounds or short swirls of batter directly into the hot oil.
  6. Fry for 1–2 minutes per side, or until golden brown and cooked through.
  7. Remove with a slotted spoon and drain on paper towels.
  8. Dust generously with powdered sugar while warm.
