Elvis Has Left the Building Scones

Ingredients:

  • Scones
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 tablespoons granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground allspice
  • 5 tablespoons cold unsalted butter, cubed
  • ½ cup mashed banana
  • 2 tablespoons peanut butter
  • Glaze
  • ⅓ cup powdered sugar
  • 1 tablespoon milk
  • 1 tablespoon peanut butter

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, baking powder, sugar, salt, cinnamon, and allspice.
  3. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine mashed banana and peanut butter until smooth.
  5. Fold the banana mixture into the dry ingredients just until the dough comes together.
  6. Turn dough onto a floured surface and gently press into an 8-inch round.
  7. Cut into 8 wedges and place on the prepared baking sheet.
  8. Bake for 12–15 minutes, or until lightly golden on top.
  9. Transfer to a wire rack and let cool for 10 minutes.
  10. Mix powdered sugar, milk, and peanut butter until smooth.
  11. Drizzle glaze over warm scones and serve.
