Italian Christmas Quiche

 

Ingredients:

  • 1 (9-inch) pie crust, homemade or store-bought
  • 1/2 pepperoni stick, sliced and chopped
  • 1 cup asparagus (frozen, thawed and drained, or cooked leftovers), cut into 1–2 inch pieces
  • 3/4 cup finely shredded mozzarella cheese
  • 1/2 cup finely shredded Parmesan cheese
  • 4 large eggs
  • 1 1/2 cups half and half
  • 1 teaspoon Italian seasoning

Instructions:

  1. Preheat oven to 400°F.
  2. If using frozen asparagus, thaw and pat dry to remove excess moisture.
  3. Sprinkle asparagus and pepperoni evenly over the bottom of the pie crust.
  4. Top with mozzarella and Parmesan cheeses.
  5. In a bowl, whisk eggs until slightly foamy. Stir in half and half and Italian seasoning.
  6. Pour egg mixture over the filling, ensuring ingredients are evenly covered.
  7. Place quiche on the middle rack, reduce oven temperature to 350°F, and bake for 30–45 minutes until set and a knife inserted in the center comes out clean.
