Ingredients:
- 1 (9-inch) pie crust, homemade or store-bought
- 1/2 pepperoni stick, sliced and chopped
- 1 cup asparagus (frozen, thawed and drained, or cooked leftovers), cut into 1–2 inch pieces
- 3/4 cup finely shredded mozzarella cheese
- 1/2 cup finely shredded Parmesan cheese
- 4 large eggs
- 1 1/2 cups half and half
- 1 teaspoon Italian seasoning
Instructions:
- Preheat oven to 400°F.
- If using frozen asparagus, thaw and pat dry to remove excess moisture.
- Sprinkle asparagus and pepperoni evenly over the bottom of the pie crust.
- Top with mozzarella and Parmesan cheeses.
- In a bowl, whisk eggs until slightly foamy. Stir in half and half and Italian seasoning.
- Pour egg mixture over the filling, ensuring ingredients are evenly covered.
- Place quiche on the middle rack, reduce oven temperature to 350°F, and bake for 30–45 minutes until set and a knife inserted in the center comes out clean.
