Strawberry Cream Cheese Cobbler

Ingredients:

Strawberry Layer

  • 2 cups fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Cobbler Batter

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, combine sliced strawberries, 1/2 cup sugar, and cornstarch. Stir well and set aside.
  3. In another bowl, beat the softened cream cheese with 1/4 cup sugar and vanilla extract until smooth and creamy.
  4. Pour the melted butter evenly into the prepared baking dish.
  5. In a separate bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Slowly add the milk and mix until just combined.
  6. Pour the batter gently over the melted butter. Do not stir.
  7. Spoon the cream cheese mixture evenly over the batter.
  8. Top with the strawberry mixture, spreading it gently across the surface.
  9. Bake for 40–45 minutes, or until the top is golden and the center is set.
  10. Remove from oven and let cool for 10–15 minutes before serving.

Serving Suggestions

  • Serve warm on its own or with a scoop of vanilla ice cream.
  • A dollop of whipped cream pairs well with the creamy filling.

  • Store leftovers covered in the refrigerator for up to 3 days.
