7UP Lemon Cake

Ingredients:

For the Cake

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 1/2 cups (3 sticks) unsalted butter, at room temperature
  • 5 large eggs, room temperature
  • 3/4 cup 7UP (or other lemon-lime soda)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract

For the Lemon Glaze

  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 2 tablespoons 7UP

Instructions:

  1. Preheat oven to 325°F (165°C). Grease and flour a Bundt or tube pan.
  2. In a large mixing bowl, cream butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in lemon zest, lemon juice, and vanilla extract.
  5. Gradually add flour, mixing just until combined.
  6. Slowly stir in the 7UP, mixing on low speed until smooth.
  7. Pour batter evenly into the prepared pan.
  8. Bake for 75–85 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow cake to cool in the pan for 10–15 minutes before removing.

Lemon Glaze

  1. In a small bowl, whisk together powdered sugar, lemon juice, and 7UP until smooth.
  2. Drizzle glaze over the warm cake, allowing it to soak in.
  3. Let glaze set before slicing.
