Kale Apple & Walnut Salad

Ingredients:

  • 6 cups kale, chopped
  • 1 apple, thinly sliced
  • ¼ cup walnuts, chopped
  • ¼ cup dried cranberries
  • Dressing
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  2. Place chopped kale in a large bowl and pour the dressing over it. Massage the kale for 1–2 minutes until softened.
  3. Add apple slices, walnuts, and dried cranberries. Toss until evenly combined.
  4. Serve immediately or chill briefly before serving.
