Ingredients:
- 4 cups curly kale, finely chopped
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- ¼ tsp fresh minced garlic
- ¼ tsp salt
- ⅛ tsp black pepper (or to taste)
- ½ cup croutons
- ¼ cup freshly grated Parmesan cheese
Instructions:
- Wash, dry, and remove kale leaves from the stems. Finely chop and place in a large bowl.
- In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and black pepper.
- Drizzle about ½ teaspoon of the dressing over the kale and massage with your hands until the leaves darken, soften, and become tender.
- Add the remaining dressing and toss well.
- Top with freshly grated Parmesan cheese.
- Crush croutons into small pieces and sprinkle over the salad just before serving. Serve immediately for best texture.
