Thick Peanut Butter Meltaway Cookies

 

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, peanut butter, powdered sugar, and brown sugar until smooth and fluffy.
  3. Beat in the egg and vanilla until fully combined.
  4. Add the flour and salt, mixing just until a thick, soft dough forms. Do not overmix.
  5. Scoop about 2 1/2 tablespoons of dough per cookie, roll into balls, and place on the baking sheet. Do not flatten.
  6. Bake for 10–12 minutes, until edges are set but centers are still soft.
  7. Let cookies cool on the baking sheet before transferring to a wire rack.
