Churro Cracker Toffee

Ingredients:

  • 40 salted saltine crackers (approx., depending on tray size)
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 2 cups white chocolate melting wafers

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange saltine crackers in a single, even layer.
  2. In a small bowl, mix granulated sugar and cinnamon; set aside.
  3. In a saucepan, melt butter and brown sugar over medium heat. Bring to a boil and boil for 3 minutes until caramel-colored.
  4. Immediately pour the hot caramel evenly over the crackers and spread to cover.
  5. Bake for 5–6 minutes, until bubbly.
  6. Remove from oven and sprinkle white chocolate wafers over the top. Let sit for 5 minutes to melt (return to oven for about 1 minute if needed).
  7. Spread the melted white chocolate evenly.
  8. Sprinkle the cinnamon sugar mixture over the chocolate while still wet.
  9. Cool completely until set (chill about 10 minutes), then break into pieces and serve.
