Beef and Rotini in Garlic Parmesan Sauce

Ingredients:

  • 1 lb (450 g) ground beef (80/20 for richer flavor or lean for a lighter dish)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 12 oz rotini pasta
  • 2 tablespoons olive oil or butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream (optional, for extra richness)
  • 1 cup freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (optional garnish)

Instructions:

  1. Cook the rotini in a large pot of salted boiling water according to package directions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed and set aside.
  3. In the same skillet, add olive oil or butter. Sauté the diced onion until soft and translucent, about 3–4 minutes.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle the flour over the onions and garlic, stirring constantly for 1 minute.
  6. Gradually whisk in the milk (and cream, if using) until smooth. Simmer until the sauce thickens.
  7. Stir in the Parmesan cheese until melted and smooth. Season with salt, pepper, Italian seasoning, and red pepper flakes if desired.
  8. Add the cooked beef back to the skillet, then fold in the cooked rotini.
  9. Toss until everything is well coated and heated through.

Serving Suggestions

  • Serve hot with extra Parmesan cheese on top.
  • Pair with garlic bread or a simple green salad.
