Christmas Fluff Salad

Ingredients:

  • For the Fluffy Base:
  • 1 package (3.4 oz) instant pistachio pudding mix (do not use cook-and-serve)
  • 1 can (20 oz) crushed pineapple, not drained
  • 1 container (8 oz) Cool Whip, thawed
  • For the Mix-Ins:
  • 1 cup miniature marshmallows
  • ½ cup maraschino cherries, drained and quartered
  • 1 can (11 oz) mandarin orange segments, well drained (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • For Garnish:
  • Additional maraschino cherries
  • Extra chopped nuts

Instructions:

  1. In a large mixing bowl, add the dry pistachio pudding mix.
  2. Pour in the crushed pineapple with its juice and stir until the pudding begins to thicken.
  3. Gently fold in the Cool Whip until fully combined and pale green.
  4. Fold in the marshmallows, cherries, and optional mandarin oranges and nuts.
  5. Transfer to a serving bowl, cover, and refrigerate for at least 4 hours or overnight.
  6. Stir gently before serving and garnish with cherries and nuts.
