Vanilla Cinnamon Sugar Christmas Bites

Ingredients:

For the Bites
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 large egg
3/4 cup milk
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 teaspoons baking powder

For the Cinnamon Sugar Topping
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a mini muffin or mini bite pan and set aside.
  2. In a medium bowl, whisk together the flour, sugar, cinnamon, and baking powder.
  3. In a separate bowl, whisk the melted butter, egg, milk, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and gently mix until just combined. Do not overmix.
  5. Spoon the batter into the prepared pan, filling each cavity about two-thirds full.
  6. Bake for 10–12 minutes, or until lightly golden and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and allow to cool in the pan for a few minutes.
  8. Combine the sugar and cinnamon for the topping and lightly dust over the warm bites before serving.
