Ingredients:
- Crust
- 24 Christmas sugar cookies (or shortbread), crushed
- 6 tbsp unsalted butter, melted
- Cheesecake Layer
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 1 cup whipped topping or whipped heavy cream
- Pudding Layer
- 1 package (3.4 oz) instant vanilla pudding mix
- 1½ cups cold milk
- ½ tsp almond extract (optional)
- ½ cup crushed Christmas cookies
- Topping
- 2 cups whipped topping
- Crushed cookies, sprinkles, or mini chocolate chips
Instructions:
- Mix crushed cookies with melted butter. Press firmly into an 8×8-inch dish. Chill.
- Beat cream cheese, sugar, and vanilla until smooth. Fold in whipped topping. Spread over crust.
- Whisk pudding mix, milk, and almond extract until thick. Stir in crushed cookies and spread over cheesecake layer.
- Top with whipped topping and garnish as desired.
- Refrigerate at least 4 hours or overnight before slicing.
