Baked Cod in Coconut Lemon Cream Sauce

Ingredients:

  • 4 cod fillets (thick, white cod)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (400 ml) full-fat coconut milk
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Season cod fillets evenly with salt and pepper and place them in a baking dish.
  3. Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, about 3–4 minutes.
  4. Add garlic and ginger; cook for 30 seconds until fragrant.
  5. Stir in coconut milk, lemon juice, and lemon zest. Simmer gently for 3–4 minutes.
  6. Pour the sauce over the cod fillets.
  7. Bake for 20–25 minutes, or until the fish flakes easily with a fork.
