Mississippi Mud Cake Brownies

Ingredients:

Brownies:

  • 1 cup butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 4 cups mini marshmallows

Frosting:

  • 1/2 cup butter
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, melt 1 cup butter. Stir in granulated sugar, eggs, and vanilla extract until well combined.
  3. Add cocoa powder, flour, and salt. Mix until smooth, then fold in pecans.
  4. Pour the batter into the prepared baking dish and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove from the oven and immediately sprinkle the mini marshmallows evenly over the top. Return to the oven for 5 minutes, or until the marshmallows are puffed.
  6. While the brownies bake, prepare the frosting: Melt 1/2 cup butter in a medium saucepan. Stir in cocoa powder and milk until smooth. Remove from heat, add vanilla, and whisk in powdered sugar gradually until smooth.
  7. Pour the warm frosting evenly over the marshmallow layer. Spread with a spatula if needed.
  8. Let the brownies cool completely before cutting into squares.
