Ingredients:
- 1 lb sea scallops, patted dry
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- Juice and zest of 1 lime
- 2 tablespoons chopped fresh cilantro
- Salt and black pepper, to taste
- Optional: red pepper flakes for heat
Instructions:
- Pat the scallops completely dry and season both sides with salt and black pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the scallops in a single layer and sear for 2–3 minutes per side, until golden brown. Do not overcrowd the pan.
- Remove the scallops and set aside.
- In the same skillet, add the butter and garlic. Cook for 30 seconds.
- Stir in the lime juice, lime zest, and cilantro. Let simmer for 1 minute.
- Return the scallops to the pan and spoon the sauce over them.
- Serve immediately with extra cilantro or lime wedges if desired.
