Ingredients:
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- ¼ tsp salt
- 1 ½ tsp vanilla extract
- 2 ¼ cups all-purpose flour
- ¾ cup pecans (or walnuts), finely chopped
- 1 cup powdered sugar (for dusting)
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and powdered sugar until light and fluffy.
- Mix in salt and vanilla, then gradually add flour until just combined. Fold in pecans.
- Roll dough into 1-inch balls and place 2 inches apart on baking sheets.
- Bake 8–10 minutes, until bottoms are lightly golden.
- Cool 5 minutes, then roll cookies in powdered sugar while warm.
- Cool completely and roll again in powdered sugar before serving.
