Cowboy Cookies

Ingredients:

• 1 cup butter
• 1 cup packed brown sugar
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon baking powder
• 2 cups all-purpose flour
• 2 cups oatmeal (old-fashioned oats)
• 1 cup chocolate chips (optional)
• 1 cup chopped nuts (pecans or walnuts, optional)
• 1 cup shredded coconut (optional)

Instructions:

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Mix in the vanilla extract.
  4. Stir in the baking soda, salt, baking powder, flour, and oatmeal until combined.
  5. Fold in chocolate chips, nuts, and coconut if using.
  6. Preheat oven to 350°F (175°C).
  7. Scoop cookie dough onto a lined baking sheet, spacing the cookies about 2 inches apart.
  8. Bake for 10–12 minutes or until the edges are golden brown.
  9. Let cool on the baking sheet for a few minutes, then transfer to a wire rack.
