Ingredients:
• 1 cup butter
• 1 cup packed brown sugar
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon baking powder
• 2 cups all-purpose flour
• 2 cups oatmeal (old-fashioned oats)
• 1 cup chocolate chips (optional)
• 1 cup chopped nuts (pecans or walnuts, optional)
• 1 cup shredded coconut (optional)
Instructions:
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Stir in the baking soda, salt, baking powder, flour, and oatmeal until combined.
- Fold in chocolate chips, nuts, and coconut if using.
- Preheat oven to 350°F (175°C).
- Scoop cookie dough onto a lined baking sheet, spacing the cookies about 2 inches apart.
- Bake for 10–12 minutes or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes, then transfer to a wire rack.
