Ingredients:
- 1 lb (450 g) lean ground turkey (99% fat-free)
- 1 large onion, diced
- 3 bell peppers (any color), diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups low-sodium beef or chicken broth
- 1 tbsp Italian seasoning
- 1 tsp paprika
- 1/2 tsp black pepper
- Salt, to taste
- 1 cup cooked brown rice or cauliflower rice (optional; zero points if using cauliflower rice)
Instructions:
- In a large pot or Instant Pot on sauté mode, cook the ground turkey until no longer pink. Drain if needed.
- Add the onion, bell peppers, and garlic. Sauté for 3–4 minutes until softened.
- Add the diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, salt, and pepper. Stir to combine.
- Stovetop: Bring to a boil, then reduce heat and simmer for 25–30 minutes.
Crockpot: Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Instant Pot: Cook on HIGH pressure for 10 minutes, then quick-release. - Stir in cooked brown rice or cauliflower rice before serving.
