Zero Point Stuffed Pepper Soup

Ingredients:

  • 1 lb (450 g) lean ground turkey (99% fat-free)
  • 1 large onion, diced
  • 3 bell peppers (any color), diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups low-sodium beef or chicken broth
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Salt, to taste
  • 1 cup cooked brown rice or cauliflower rice (optional; zero points if using cauliflower rice)

Instructions:

  1. In a large pot or Instant Pot on sauté mode, cook the ground turkey until no longer pink. Drain if needed.
  2. Add the onion, bell peppers, and garlic. Sauté for 3–4 minutes until softened.
  3. Add the diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, salt, and pepper. Stir to combine.
  4. Stovetop: Bring to a boil, then reduce heat and simmer for 25–30 minutes.
    Crockpot: Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
    Instant Pot: Cook on HIGH pressure for 10 minutes, then quick-release.
  5. Stir in cooked brown rice or cauliflower rice before serving.
  6. Serve warm.
