Box Mix Turtle Cake

Ingredients:

For the Cake

  • 1 box chocolate cake mix (15.25 oz)
  • Ingredients listed on the cake box (eggs, oil, water)
  • 1 cup semisweet chocolate chips

Caramel Layer

  • 1 bag soft caramels (about 11 oz)
  • 1/2 cup evaporated milk

Pecan Layer

  • 1 cup chopped pecans

Chocolate Topping (Optional)

  • 1/2 cup chocolate chips, melted

Instructions:

  1. Prepare the Cake Batter:
    Preheat the oven according to the cake mix instructions.
    Prepare the cake batter as directed on the box. Stir in 1 cup semisweet chocolate chips.
  2. Bake Half the Batter:
    Pour half of the cake batter into a greased 9×13-inch baking pan.
    Bake for about 15 minutes, just until set but not fully baked.
  3. Make the Caramel Layer:
    In a saucepan over low heat, melt the soft caramels with evaporated milk. Stir until smooth.
  4. Assemble the Turtle Layer:
    Pour the caramel mixture evenly over the partially baked cake.
    Sprinkle chopped pecans over the caramel.
    Carefully spoon the remaining cake batter on top.
  5. Bake:
    Return the pan to the oven and bake for an additional 20–25 minutes, or until the cake is fully baked.
  6. Optional Topping:
    Drizzle melted chocolate over the cooled cake for extra richness.
  7. Serve:
    Allow to cool before slicing for clean layers.
