Lemon Crinkle Cookies

Ingredients:

  • 1 box (15.25 oz) lemon cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon lemon extract (optional)
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar
  • 1 tablespoon granulated sugar

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix cake mix, eggs, oil, lemon extract, and lemon zest until a thick dough forms.
  3. Combine powdered sugar and granulated sugar in a bowl.
  4. Roll dough into 1–1.5 inch balls, then coat fully in the sugar mixture.
  5. Place on the baking sheet and bake for 9–11 minutes until crinkled and soft.
  6. Cool 5 minutes, transfer to a rack, and dust with extra powdered sugar.
