Cherry Cheesecake Cupcake Bites

Ingredients:

  • Graham Cracker Crust:
  • 1 1⁄2 cups crushed graham crackers
  • 2 tbsp granulated sugar
  • 6 tbsp melted unsalted butter
  • Cheesecake Filling:
  • 2 blocks (8 oz each) cream cheese, softened
  • 1⁄2 cup granulated sugar
  • 2 large eggs, room temp
  • 1 tsp vanilla extract
  • 1⁄2 cup sour cream
  • Topping:
  • 1 can (21 oz) cherry pie filling

Instructions:

  1. Preheat oven to 325°F (163°C). Add cupcake liners to a muffin pan.
  2. Mix graham crumbs, sugar, and melted butter. Press 1½ tbsp into each liner. Bake 5 minutes.
  3. Beat cream cheese until smooth. Add sugar. Mix in eggs one at a time, then vanilla and sour cream.
  4. Fill each cup ¾ full with batter. Bake 15–18 minutes until set but slightly jiggly.
  5. Cool in oven 10 minutes with door cracked, then cool fully at room temp.
  6. Spoon cherry topping over each cupcake. Chill at least 2 hours or overnight.
