Pumpkin Spice Crumble Cake

Ingredients:

  • Pumpkin Base:
  • 15 oz pumpkin purée (NOT pie mix)
  • 12 oz evaporated milk
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Crumble:
  • 13.2 oz spice cake mix
  • 6 tbsp melted salted butter
  • Optional Toppings:
    Whipped cream, caramel syrup, crushed pecans, vanilla ice cream

Instructions :

  1. Preheat oven to 350°F and butter a 9×13 baking dish.
  2. In a bowl, whisk pumpkin purée, evaporated milk, eggs, sugar, cinnamon, and vanilla until smooth.
  3. Pour the mixture into the baking dish.
  4. In another bowl, mix the spice cake mix with melted butter until crumbly.
  5. Sprinkle the crumble evenly over the pumpkin base.
  6. Bake for 55 minutes or until the center is set and the top is golden.
  7. Cool for 15 minutes, then serve warm with your favorite toppings.
