Slow Cooker Apple Cider Pulled Pork

Ingredients:

  • For the Pork:
  • 3–4 lbs pork shoulder or pork butt
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil (optional)
  • Apple Cider Sauce:
  • 1½ cups apple cider
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar or honey
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cinnamon stick (optional)
  • Optional Sides:
  • Buns, coleslaw, mashed potatoes, roasted veggies, pickles, BBQ sauce

Instructions:

  1. Pat pork dry and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. (Optional) Sear pork in olive oil 2–3 minutes per side until browned.
  3. Add sliced onion and garlic to slow cooker. Pour in apple cider, vinegar, brown sugar, Worcestershire, thyme, rosemary, and cinnamon stick.
  4. Place pork on top and spoon some sauce over it.
  5. Cook on LOW 8–10 hours or HIGH 4–5 hours, until tender and falling apart.
  6. Remove pork and shred with two forks; discard excess fat.
  7. (Optional) Simmer cooking liquid 5–10 minutes to thicken. Add back to shredded pork.
  8. Serve on buns, over potatoes, or with your favorite sides.
