Crockpot French Onion Meatloaf

Ingredients:

  • 2 lbs ground beef (80/20)
  • 1 packet dry onion soup mix
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded mozzarella (optional)
  • 1/2 cup grated Parmesan
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme or Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp butter
  • 1 cup beef broth
  • 1 cup shredded Gruyère or Swiss cheese

Instructions:

  1. Melt butter in a skillet and cook sliced onions for 10–12 minutes until caramelized. Set aside.
  2. In a large bowl, mix beef, onion soup mix, garlic, breadcrumbs, eggs, milk, Parmesan, ketchup, Worcestershire, thyme, salt, and pepper.
  3. Shape into a loaf and place in the slow cooker.
  4. Add caramelized onions over and around the loaf. Pour broth into the bottom (not on top).
  5. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  6. Add Gruyère or Swiss cheese on top for the last 10 minutes to melt.
  7. Slice and serve with the onion broth over each piece.
