Cranberry Pecan Cream Cheese Stuffed Dates

Ingredients:

  • 12 Medjool dates, pitted
  • 4 oz cream cheese, softened
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup pecans, chopped
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix cream cheese, cranberries, pecans, honey, vanilla, and salt until smooth.
  3. Slice dates lengthwise without cutting fully through, creating a pocket.
  4. Fill each date with the cream cheese mixture.
  5. Place on the baking sheet and bake 10–12 minutes until warm and softened.
  6. Cool slightly and serve warm or at room temperature.
