Ingredients:
- 12 Medjool dates, pitted
- 4 oz cream cheese, softened
- 1/4 cup dried cranberries, chopped
- 1/4 cup pecans, chopped
- 1 tbsp honey
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Mix cream cheese, cranberries, pecans, honey, vanilla, and salt until smooth.
- Slice dates lengthwise without cutting fully through, creating a pocket.
- Fill each date with the cream cheese mixture.
- Place on the baking sheet and bake 10–12 minutes until warm and softened.
- Cool slightly and serve warm or at room temperature.
