No-Bake Mint Chocolate Chip Clusters

Ingredients:

  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 1 ½ cups miniature marshmallows
  • 1 cup chopped pecans
  • 1 teaspoon peppermint extract
  • ½ cup mini chocolate chips (for garnish)
  • Pinch of salt

Directions:

1. Melt the Chocolates

In a microwave-safe bowl, combine the semi-sweet and white chocolate chips.
Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

2. Add Flavor

Stir in the peppermint extract and a pinch of salt until fully blended.

3. Combine

Fold in the marshmallows and chopped pecans, coating everything evenly in the chocolate mixture.

4. Form the Clusters

Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
Shape into clusters using a spoon or cookie scoop.

5. Garnish

Sprinkle mini chocolate chips over the top of each cluster.

6. Chill

Refrigerate for about 30 minutes or until set and firm.

7. Serve

Enjoy straight from the fridge — cool, minty, and perfectly crunchy!
