Ingredients:
Dough:
- 6 oz cream cheese
- 2 sticks (1 cup) butter
- 2 cups all-purpose flour
- Filling:
- 2 tbsp melted butter
- 2 eggs
- 1 ½ cups packed brown sugar
- 1 ½ cups chopped pecans
- 2 tsp vanilla
Instructions:
- Combine cream cheese and butter, mixing until smooth. Add flour and mix to form the dough.
- Press about 1 tbsp of dough into each mini muffin cup, shaping it up the sides to form a well.
- For the filling, mix melted butter, eggs, brown sugar, and vanilla until well combined. Stir in chopped pecans.
- Spoon about ½ tbsp filling into each dough cup, leaving a little room for puffing.
- Bake at 350°F for 25–30 minutes. Makes about 40 mini pecan pies.
