Mini Pecan Pies

Ingredients:

Dough:

  • 6 oz cream cheese
  • 2 sticks (1 cup) butter
  • 2 cups all-purpose flour
  • Filling:
  • 2 tbsp melted butter
  • 2 eggs
  • 1 ½ cups packed brown sugar
  • 1 ½ cups chopped pecans
  • 2 tsp vanilla

Instructions:

  1. Combine cream cheese and butter, mixing until smooth. Add flour and mix to form the dough.
  2. Press about 1 tbsp of dough into each mini muffin cup, shaping it up the sides to form a well.
  3. For the filling, mix melted butter, eggs, brown sugar, and vanilla until well combined. Stir in chopped pecans.
  4. Spoon about ½ tbsp filling into each dough cup, leaving a little room for puffing.
  5. Bake at 350°F for 25–30 minutes. Makes about 40 mini pecan pies.
