Roasted Potatoes, Sausage & Green Beans

Ingredients:

  • 5 lbs russet potatoes, cubed
  • 2 smoked sausage links, sliced
  • 1–2 lbs fresh green beans, washed
  • 3–5 tbsp olive oil
  • 3 packets onion soup mix
  • Optional: shredded cheese, BBQ sauce, ranch

Instructions:

  1. Boil cubed potatoes 5–8 minutes until slightly tender, then drain well.
  2. In a bowl, mix sausage and green beans with 2–3 tbsp olive oil and 2 packets onion soup mix.
  3. In another bowl, toss drained potatoes with 1–2 tbsp oil and 1 packet onion soup mix.
  4. Spread everything on a sheet pan.
  5. Bake at 425°F for 25 minutes, flip, then bake another 25 minutes.
  6. Broil until crispy and serve. Add toppings if desired.
