Grandma’s Fluffy Cinnamon Sugar Donut Muffins

Ingredients:

For the Muffins:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with liners or grease well.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined. Do not overmix.
  5. Divide the batter evenly into the muffin cups, filling each about ¾ full.
  6. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the muffins are warm, mix the cinnamon and sugar for the topping in a shallow bowl.
  8. Lightly brush the warm muffin tops with melted butter (optional) and dip or roll the tops in the cinnamon sugar mixture.
  9. Serve warm or at room temperature.
