Ingredients:
For the Muffins:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ cup milk
- ⅓ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
For the Cinnamon Sugar Coating:
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions:
- Preheat oven to 375°F (190°C). Line a muffin tin with liners or grease well.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir gently until just combined. Do not overmix.
- Divide the batter evenly into the muffin cups, filling each about ¾ full.
- Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins are warm, mix the cinnamon and sugar for the topping in a shallow bowl.
- Lightly brush the warm muffin tops with melted butter (optional) and dip or roll the tops in the cinnamon sugar mixture.
- Serve warm or at room temperature.
