Ingredients:
Cookie Layer:
- 1 roll chocolate chip cookie dough (store-bought)
Cheesecake Filling:
- 4 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Filling:
In a small bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth.
Scoop small spoonfuls (about 1–1½ teaspoons each) onto a parchment-lined plate.
Freeze for 20–30 minutes, or until firm. - Prepare the Cookie Dough:
Cut the cookie dough into 12–14 equal pieces.
Flatten each piece into a disc. - Stuff the Cookies:
Place one frozen cheesecake ball in the center of a cookie disc.
Fold the dough around the filling, sealing the edges well.
Shape into a ball and place seam-side down on a parchment-lined baking sheet.
Leave space between cookies, as they will spread. - Bake:
Preheat oven to 350°F (175°C).
Bake for 11–14 minutes, or until lightly golden around the edges.
Let cool on the baking sheet for 10 minutes before transferring to a rack. - Serve:
Enjoy warm for a gooey center, or chilled for a firmer cheesecake filling.
