Ingredients:
- 1 large head cauliflower, chopped into florets
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1 cup cooked shredded chicken or turkey
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions:
- Prep the Cauliflower:
Cut the cauliflower into bite-sized florets. Steam for 8–10 minutes until fork-tender, then drain well and pat dry. - Mix the Filling:
In a large bowl, combine the steamed cauliflower, cottage cheese, shredded chicken or turkey, half of the mozzarella, eggs, garlic powder, onion powder, salt, and pepper. Stir gently until evenly mixed. - Assemble the Bake:
Grease a baking dish and spread the mixture in an even layer.
Top with the remaining mozzarella and all of the Parmesan. - Bake:
Bake at 375°F (190°C) for 25–30 minutes, or until the top is golden and bubbling. - Serve:
Allow to cool slightly, garnish with parsley if desired, and serve warm.
