Cheesy Cauliflower Protein Bake

Ingredients:

  • 1 large head cauliflower, chopped into florets
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked shredded chicken or turkey
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Prep the Cauliflower:
    Cut the cauliflower into bite-sized florets. Steam for 8–10 minutes until fork-tender, then drain well and pat dry.
  2. Mix the Filling:
    In a large bowl, combine the steamed cauliflower, cottage cheese, shredded chicken or turkey, half of the mozzarella, eggs, garlic powder, onion powder, salt, and pepper. Stir gently until evenly mixed.
  3. Assemble the Bake:
    Grease a baking dish and spread the mixture in an even layer.
    Top with the remaining mozzarella and all of the Parmesan.
  4. Bake:
    Bake at 375°F (190°C) for 25–30 minutes, or until the top is golden and bubbling.
  5. Serve:
    Allow to cool slightly, garnish with parsley if desired, and serve warm.
